Springville AL July 15-16 11th Place Overall / 19 teams (626) One month from our 1st place showing in ribs, the Co-Bros were anxious to cook again and that we did at the cozy but soggy Homestead Hollow just northeast of Birmingham, AL. We decided on our spot across from our BBQ Buddies (Jiggy Piggy and Whoop-de-Que) and just happen to land in the ‘mosh pit’ thanks to remnants of Hurricane Dennis that struck the Gulf Coast a week earlier.
Finally at mid-afternoon we completed the “EGG Carton” set-up after a quick trip to a local hardware store because during the rough ride on I-59 we lost a few parts to our can-top. After trimming/rubbing the competition meats, we were able to relax in the late afternoon/evening while other teams prepared their Wild Game meats and participated in the Fiesta Grill Challenge hosted my Chef McWright of the Pig Pals. While having a few cold beverages with several BBQ friends we had a surprise guest appear in the swamp grounds at the Hollow (Brent- the other Co-Bro as a crustacean…see the Brisket trophy pic for details). After a few hours of sleep, the Co-Bros awoke to a cool x-large Egg, so we had to stoke it up to get the ribs on the smoker in time. Our BBQ Beauties, Kim and Tara, continued their superb job of preparing the garnish boxes with limited greenery overhang to improve our appearance scores. After the smoke settled and the judges treated their pallets with the Co-Bro-Que, our goal of improving our pork and brisket scores was accomplished with our highest scores ever on the circuit for those categories. The brisket score was high enough to allow the Co-Bros a stage call for 3rd place (166), and we also recorded another Top 10 with our ribs. Ooh…did the brisket and ribs shine with the TNR sauce brushed on the bark/crust. Overall, we were pleased with our turn-in meats but our chicken slipped substantially and we think we know why (…Papa Co-Bros worst fear with poultry…not cooked thoroughly). Oh well, I guess we are allowed a few flaws since we are rookie BBQers on the KCBS circuit. We continued the upward climb of our overall score (626), sold some more DP rubs and TNR sauce, and continued to spark more keen interest in the BGE and the “EGG carton”.
